<p>So it&#8217;s moving a couple days earlier in the week to help get over the mid-week slump &#8211; on Wednesday nights let us do the cooking!</p>

<p>We will be kicking off our first WNTO next Wednesday March 7th by sending out the menu on Monday for orders to pick-up on Wednesday between 5 pm and 7 pm.</p>
<p>Other than the day of the week, everything else will remain the same.  We&#8217;ll provide the entree (with a vegetarian option), a couple of sides with salad and simple dessert, packaged as dinner for 2 for $25.  We&#8217;ll need to know whether you&#8217;d like the meat entree of the veggie and the number of dinners for 2 you&#8217;d like to order.</p>
<p>Also, as we spread the word to really get this night going, we&#8217;d like to offer YOU 15% off for spreading the word as well!  Tell your friends to mention your name when ordering, and we&#8217;ll pass a little savings on to you.</p>
<p>Thanks again for all of your support (and patience) as we embark on new ideas for dining in Lawrence.</p>

    	    		<img src="http://blog.culinariafoodandwine.com/wp-content/uploads/2012/02/IMG_4329-440x330.jpg" alt="The Little Mexican Cooking School Courtyard"  width="440"  height="330"  class="woo-image" />    	    		</a></p><p>My mom and I have birthdays exactly one week apart.  Interestingly enough, my sister&#8217;s and dad&#8217;s birthdays are back-to-back, so we&#8217;ve always celebrated November birthdays and February birthdays.  This particular February birthday celebration was sure to be a big one as my mom was turning 60 and wasn&#8217;t feeling terribly enthused.  Back in December, during the throws of holiday parties, I began to daydream about vacation &#8211; a break of sorts from the hustle and bustle of holiday catering and events.  That&#8217;s when it occurred to me &#8211; what would soften the blow of turning 60 and give Aaron and I a much needed break from owning and operating our catering company?  A week long Mexican fiesta at an all-inclusive resort on the Riviera Maya.  Yeah!</p>
<p><span id="more-303"></span></p>
<p>While exploring activities to enhance our vacation &#8211; and hopefully gives us a little hands-on experience with Aaron&#8217;s favorite cuisine &#8211; I came upon a link to <a title="The Little Mexican Cooking School" href="http://www.thelittlemexicancookingschool.com">The Little Mexican Cooking School</a> &#8211; Voilà!</p>
<p>Co-founder, Catriona Brown, and Chef Pablo Lopez Espinosa de los Monteros create the perfect atmosphere for learning the history of Mexican cuisine coupled with important culinary techniques for any genre of cooking.  Much like Aaron and I have our interests and areas of expertise when it comes to food, beverage, and culture, Catriona and Chef Pablo intertwined the curriculum, each explaining their topic, one leading into the next.</p>
<p>Catriona explained traditions of Mexican hospitality, popular beverages (<a title="Agua Fresca" href="http://http://en.wikipedia.org/wiki/Aguas_frescas">Agua Frescas</a>!) with a little tequila tutorial as well as the origins of sweets and chocolate in Mexico.  Chef Pablo&#8217;s conversations began with the importance of fresh ingredients and techniques of building flavors by charring the vegetables or properly seasoning the <a title="Molcajete" href="http://http://en.wikipedia.org/wiki/Molcajete">molcajete</a>.  Their presentation was further confirmation that the best chefs all start with the freshest foods &#8211; local, organic, freshly ground &#8211; each component was beautifully selected, it was obvious we would be trying some delicious dishes within hours.</p>
<p>We started with pressing and grilling our own sopes topped with refried black beans, lettuce and cream.  They were the perfect vehicle for the salsas we would create moments later:  salsa asada, mexicana, and frita ( my favorite &#8211; I wanted to guzzle it) as well as several other incredible concoctions  (including one with pumpkin seeds and a habanero-onion version that I also wanted to eat on everything).   The sopes were mind-boggling &#8211; I couldn&#8217;t wait to find out what would be next.</p>
<p>We moved from the courtyard, the outdoor kitchen with a cool ocean breeze that came through the impeccable garden (heavenly) to the kitchen to prepare Roasted Chicken in a Chipotle-Piloncillo-Tomatillo Salsa, Tamal de Frijol and our dessert of the day, which turned out to be a Mexican-Chocolate Torte (yesssssss!).  Chef Pablo could see he had a friend in Aaron and put him to work sautéing the tomatillos while I carefully mixed and measured the masa for the tamales.  My mom created the Mexican-Chocolate Torte from start to finish with Chef Pablo, which further adds to her dessert repertoire (yesssssss!).</p>
<p>After roasting off the chicken and a brief plating tutorial, it was time to indulge.  It was thrilling.  The combination of spice and sweetness &#8211; the flavors and freshness &#8211; it tasted like, well, Mexico.  Delicioso.</p>
<p>So go to the Yucatan Pennisula &#8211; to Puerto Morelos &#8211; and spend the day with the folks at the Little Mexican Cooking School.  It is a completely unique experience where a love of food, (tequila), and friends is embodied.  Salut!</p>
